Apart from being an educator, cooking has always been my passion. I can remember first watching my dad, Austin Spence, as a young child growing up magically working his hands to create delicious meals. My father was a cook, sous chef, and an executive chef who worked in several prominent 5-star hotels in Jamaica  West Indies, and became known for the food he prepared. He remained extremely passionate and excited when witnessing people from all over taking such pleasure in his lovely, colorful, and tasty dishes.

 

 Not only was my dad an expert cook, but my mother, Merris Spence, was also very unique and creative in preparing our homemade dishes. My shared love for cooking and desire to develop the skills learned from my parents has found favor among extended family who always request my cooking and decorating for celebrations and family or friends’ functions..

Bringing Caribbean dishes to a food cart offers a unique and exciting culinary experience that can attract a diverse range of customers. Cooking isn't just a job for me, it's a form of self-expression and a way to connect with others through the universal language of food.
